Miso is a key ingredient in Japanese cooking and it forms the base of many dishes, including miso soup. There are more than 1,000 types of miso with different texture, flavor and color. Dashi, an all-purpose vegetable broth made from sea kelp, is also a staple in Japanese cooking.
